Extra Virgin Olive Oil
The most important aspect of an Olive Oil is FRESHNESS, one should always
ask “How old is my Olive Oil”. That is why at Navidi’s we rotate our Olive Oils
according to production. We strive to purchase Southern Hemisphere oils in
Spring – Summer and Northern Hemisphere Oils in Winter, thus assuring that we
will always have the most freshest (HEALTHIEST) Olive Oils.
There are 4 important factors that determine Extra Virgin Olive Oil. Unfortunately
you will never find this information on a bottle of EVOO. A good quality EVOO
is high in Polyphenols and Oleic Acid and lower in Peroxide & FFA (Free Fatty
Acid). At Navidi’s we will explain these values to you and walk you through the
steps of not only buying an Olive Oil that tastes good, but one that is Healthy for
you and will last longer.
Infused EVOO
It is possible to make an excellent infused oil at home using dried wild herbs.
The intensity of the flavor varies with the season, whether the herbs are wild
or domestic, how the local growing conditions have been, etc. It takes a lot of
trial and error. It is more art than science and the people who are good at it are
reluctant to share their trade secrets. The oil will pick up the flavor fairly quickly,
in the first few weeks, and then slowly intensify. It is fine to leave the herbs in for
a long time; eventually all the flavor leaves the herbs and the oil flavor stabilizes.
At Navidi’s we carry Extra Virgin Olive Oils infused with only the freshest herbs,
garlic, vegetables, that are infused at the mill by professionals, we challenge you
to come in and taste the difference.
Fused EVOO
While many people have heard of infused olive oils, olive oils to which herbs,
spices or fruit are added to. Fused olive oils are not as common. The difference
is that while adding flavor or foreign foods to an olive oil causes the oil to
breakdown and become rancid (infused olive oils which are not used very quickly
will develop a very undesirable flavor), fusing an olive oil (actually pressing the
olives and fruit together simultaneously) creates a beautiful harmony that will not
deteriorate the flavor profile of the oil. At Navidi’s all of our Citrus Oils are fused,
it gives a much crisper taste and lasts much longer than infused oils.
Specialty Oils
At Navidi’s we have searched the globe to find those unique, one of kind, rare
oils. These are the oils you won’t find at the large grocer chain stores or typical
food specialty store. We encourage you to find that special recipe that calls for
these rare oils, explore your taste-buds and give these oils a try, we swear they’ll
be a fun way to add a unique flare to any meal.
Balsamic Vinegars of Modena Italy
Originated from Italy, this condiment is an aromatic, thick, dark, syrup-like aged
type of vinegar, prepared by the reduction of cooked grapes. Balsamic vinegar,
though popularly referred to as wine vinegar is not made from wine, but is
prepared from grape pressings, whose fermentation process has been hindered.
The best balsamic vinegar is prepared in the hills of Modena, in Italy, where
unique and flavorful balsamic vinegar is formed. This vinegar is known to be a
cut above the other types of vinegar. Unlike the sharp taste of vinegar, balsamic
vinegar has a rich, sweet flavor. At Navidi’s we have White & Dark Balsamic
blends with real infused flavors from our Dark Chocolate to Red Apple infusions
