Navidi's Cabbage, Cucumber, and Tomato Salad with Quinoa
Ingredients:
• 2 cups cooked quinoa or couscous
• 3 beefsteak tomatoes
• 1 1/2 cups thinly sliced green or savoy cabbage
• 1 cucumber, seeded and sliced
• 1/4 medium red onion, thinly sliced
• 1/4 cup chopped fresh dill
• 1/4 cup chopped fresh flat-leaf parsley
• 1 teaspoon Dijon mustard
• 1/3 cup Navidi's Garlic Olive Oil
• 2 Tablespoons Navidi's Sicilian Lemon Balsamic
• salt and pepper to taste
Directions: Spread cooked grains (couscous or quinoa) onto large platter. Slice tomatoes in wedges like you would stone fruit but do not slice through all the way to bottom. Tomato will open up like a flower and place atop grains on platter. Whisk mustard, salt, pepper, and balsamic together. In a slow stream while whisking continuously add olive oil to make vinaigrette. Mix cabbage, cucumber, red onion, parsley, and dill in bowl. Dress with vinaigrette and top tomatoes and grains with dressed cabbage and cucumber mixture. Enjoy!
