Navidi's Lamb Kebabs with Shallot Relish

Ingredients for Kebabs: 

• 2 lbs. of kebab meat

• 1 teaspoon sea salt

• 1 teaspoon pepper

• 1 teaspoon ground cumin 

• 1 teaspoon paprika

• 1 medium white onion

• 1/4 cup chopped cilantro

• 1/4 cup chopped flat-leaf parsley

• 3 Tablespoons Olive Wood Smoked Olive Oil

• 2 Tablespoons Pomegranate Balsamic

Ingredients for Shallot Relish:

• 1/2 cup finely-chopped shallots

• 1/2 cup finely-chopped flat-leaf parsley

• 2 Tablespoons lemon juice

• 2 Tablespoons Navidi's Spanish Melgarejo Picual or similar robust Navidi's Seasonal Extra-Virgin Olive Oil

• salt and pepper to taste

 Directions: Combine kebabs with marinade ingredients and marinate 30 min. to 3 hours prior to cooking.  Thread meat on skewers that have been soaking in water and grill.  For the relish, combine all ingredients in a bowl and mix.  Serve immediately and enjoy!
