Navidi's Spinach Salad with Maple-Bacon Balsamic Vinaigrette

Navidi's Spinach Salad with Maple-Bacon Balsamic Vinaigrette

Serves 4

Ingredients:

• 2 quarts/6 cups washed spinach leaves 

• 4 slices cooked and crumbled bacon

• 1/2 cup mandarin oranges

• 6 Tablespoons Navidi's Seasonal Extra-Virgin Olive Oil

• 2 Tablespoons Navidi's Vermont Maple Balsamic

• 1 Tablespoon Navidi's Cara Cara Orange and Vanilla White Balsamic

• 2 Tablespoons minced shallot

• 1 teaspoon Dijon mustard

• Kosher salt and pepper to taste

Directions: Place Maple and Orange Balsamics, 1/2 of shallots, salt, pepper, and mustard into a small saucepan over medium heat.  Stir and warm briefly, remove from heat before it simmers.  Allow to cool for 1 minute, then whisk in olive oil and add 1/2 of crumbled bacon.  Dress spinach with warm vinaigrette and top with oranges and remaining bacon and shallots.  Serve immediately and enjoy!
