Navidi's Zucchini Fritters with Tzatziki
Ingredients for Fritters:
• 3 medium zucchini, grated with a box grater
• 1/4 teaspoon kosher salt, plus more for sprinkling on fritters once fried
• 1 egg, beaten
• 1/4 cup all-purpose flour
• 1 Tablespoon cornstarch
• Navidi's Pecan Oil, for frying (no longer available at Navidi's, use an alternate high-heat oil)
• 1/4 cup minced chives
• 3 Tablespoons grated Parmigiano-Reggiano
• 1/2 teaspoon red pepper flakes
• Black pepper, to taste
Ingredients for Tzatziki:
• 1/2 cucumber, grated
• 12 oz. plain Greek yogurt
• 1 Tablespoon white distilled vinegar (not balsamic)
• 2 Tablespoons Navidi's Wild Fernleaf Dill Olive Oil
• 2 cloves garlic, minced
• 1-2 Tablespoons fresh dill, minced
• Salt to taste
To make Fritters: Sprinkle grated zucchini with salt and set over colander to drain for 15 minutes. Wring out zucchini with a tea towel. Mix wrung-out zucchini in bowl with egg, flour, cornstarch, Parmigiano-Reggiano, red pepper flakes, and black pepper. Heat Pecan Oil for frying. Use soup spoon to scoop out portions of zucchini mixture and flatten a bit with hands before dropping in oil and frying until crisp. Sprinkle with salt and chives and serve immediately with Tzatziki for dipping or other cream-based sauce (aioli, homemade ranch, etc.).
To make Tzatziki, grate cucumber and wring out as with zucchini above. Stir into Greek yogurt along with all other ingredients. Can add an additional drizzle of Navidi's Dill EVOO on top. Serve and enjoy!
