While many people have heard of infused olive oils, olive oils to which herbs, spices or fruit are added, fused olive oils are not as common. The difference is that while adding flavor or foreign ingredients to an olive oil causes the oil to break down and become rancid (infused olive oils which are not used very quickly will develop a very undesirable flavor), fusing an olive oil (actually pressing the olives and fruit together simultaneously) creates a beautiful harmony that will not deteriorate the flavor profile of the oil. At Navidi’s all of our Citrus Oils are fused; it gives a much crisper taste and lasts much longer than infused oils.
